Barbequed Pineapple

Most holidays are either founded on religion, celebrate an important historical figure, or celebrate a world culture.  Memorial Day is the only holiday that  was born out of appreciation for those who defended our country.  And what better way to celebrate the freedom they fought to protect than with a cookout!  The pools are open and the weather in San Antonio will be great!  Check out this recipe for grilled pineapple that I found on AllRecipes.com.  Hope everyone at Vista Ridge has a great weekend!

Barbequed Pineapple

Ingredients

  • 1 fresh pineapple
  • 1/4 cup rum
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves

Directions

  1. Peel the pineapple and, leaving it whole, cut out the center core. Slice into 8 rings, and place them in a shallow glass dish or resealable plastic bag. In a small bowl, mix together the rum, brown sugar, cinnamon, ginger, nutmeg, and cloves. Pour marinade over the pineapple, cover, and refrigerate for 1 hour, or overnight.
  2. Preheat grill for high heat. Lightly oil grate.
  3. Grill pineapple rings 15 minutes, turning once, or until outside is dry and char marked. Serve with remaining marinade (or try serving in a bowl or banana boat with pineapple on either side, and a scoop of ice cream or two with juice glaze on top).

I just came across this HILARIOUS cat video on the web.  Check it out.  While we’re on pets, what are everyone’s thoughts on the names that we give our furry friends nowadays?  According to an article in the Atlanta Journal-Constitution, the way we name our pets has changed drastically over the years.

Basically, the author says that pet owners are giving their pets more “human” names, such as Hannah, Charlie and Jack because we’ve grown closer to them and consider them family more than we have in the past.  One of the reasons is because people are waiting until later in life to have children and our pets serve as “fill-ins.”  What do you think, Vista Ridge?  Does the author have a point?

My five year-old daughter, Ryann, recently determined that she wants to be a veterinarian when she grows up.  She also has proclaimed that dinosaurs are officially her favorite animals.  She knows that she won’t actually be able to help any of the dinosaurs when she becomes a vet because they are “eck-stink” (that’s extinct for those of us that have fully developed our ability to pronounce).  I haven’t yet been able to explain to her why they are extinct…until today.

Theories have floated around for ages regarding what caused dinosaur extinction, from volcanic eruptions to Ice Age weather conditions.  Now, according to a Yahoo!News/Reuters report, an international team of researchers has concluded that dinosaurs were wiped out 65 million years ago when a 9 mile-wide asteroid touched down in Mexico.  Apparently, it took them crunching 20 years of research data to prove this.  I’m certainly no expert, but a 9 mile-wide asteroid certainly sounds like it would do the trick.  Can’t wait to tell Ryann!

Let It Snow, Let It Snow, Let It Snow!!!

snowflakesIt looks like snow is headed to San Antonio this afternoon!  If the snow hits and sticks, this will be the first time in six years that measurable snow has accumulated in the area.  The last time snow actually stuck was in February 2004.

According to the Express-News…

“Traces of snow are projected for downtown San Antonio, while the North Side is expected to have one-quarter to one-half inch of snow. Temperatures city-wide will remain in the 30s all day, reaching a low of 32 at night.”
